DOMAINE CHANTAL LESCURE
The estate was created in 1975 by Chantal Lescure and Xavier Marchand de Gramont. The estate was in the hands of the Marchand de Gramont family for over thirty years. Sadly Chantal passed away in 1996 and her sons Aymeric and Thibualt hired François Chavériat to take over the technical direction of the estate, a post that he held until he retired in 2024. François took some radical steps such as discontinuing the use of chemicals in 1997 which was the first step which led to the estate receiving organic certification in 2006.
The estate is now run by Burgundian entrepreneur Jean-Philippe Girard who is the founder and director of Eurogerm, a company that offers solutions for the wheat-flour-bread industry. He has now focused his passion into winemaking.
Together with Eric Rousseau, owner of his own prestigious estate in Gevrey-Chambertin, the two men are passionate about writing the next page in the history of the domaine. With the assistance of the young vigneron Fabrice Groussin they use modern viticulture methods that are respectful to each vineyard parcel of the nineteen hectares that stretch from the Côte d’Or in Meursault north to Vougeot in the Côte de Nuits. Since 2009 the estate has been 100% Ecocert organic certified.
For the past twenty five years all of the viticultural work is by hand using sustainable methods in a manner that is respectful to the soil, the plants, the environment, and the surrounding ecosystem. The combination of these elements are essential to make wines which are pure, authentic, and express the finest qualities of the terroirs and grape varietals from each plot.
Controlled yields and waiting for optimal ripeness of the grapes before the grapes are hand harvested and carefully sorted which ensures that the finesse of each unique parcel and grape varietal is preserved. Fermentation takes place slowly with wild yeasts. The reds have minimum punch downs and the white are gently pressed using a pneumatic press and no bâtonnage during the aging process as the goal is express the terroir rather than the fruit. The wines will age for 16 to 18 months in oak barrels where a very small percentage of new wood is used in the cool cellar. The wines are made using minimal intervention, are decided to age well and are not filtered before bottling.
All of the wines are impressive, and some particularly outstanding cuvées include in Pommard Les Vignots, Beaune Premier Cru Les Chouacheux, Clos de Vougeot Grand Cru.
