PIERRE-YVES COLIN-MOREY
The eldest son of the famous winemaker Marc Colin, Pierre-Yves worked at his father’s estate from 1994 until 2005 when he created his own domaine alongside that of his wife Caroline in Chassagne-Montrachet with the vineyards that they both inherited from their famous winemaking families in 2001. Today Pierre-Yves is considered as being one of the finest winemakers in the appellation.
The thirteen hectares of vines are 92% Chardonnay, 5% Pinot Noir, and 3% Bourgogne Aligoté that are spread across Chassagne-Montrachet, Saint-Aubin, Santenay, Meursault, and Puligny-Montrachet. Two of the hectares have been inherited from their families and the rest of the plots have been acquired over the years.
The steepest plots have grass growing between the vineyard rows on the steepest slopes to create biodiversity and also keep the precious terroir from eroding. The vines are cultivated sustainably in a sensitive manner that ensures that they are in perfect health. The grapes are only harvested when they have achieved a balance and harmony between perfect maturity and freshness.
The white grapes are slowly and softly whole cluster pressed to extract the best juices that result in complex wines. The fermentation is carried out using indigenous yeast in 350 litre oak barrels with up to 30% new wood depending on the vintage. Once fermentation is complete, the wine ages between fifteen and twenty months on lees without bâtonnage.
There is no filtration before the wine is bottled, the bottled as sealed with natural cork and wax to preserve each vintage under ideal conditions. Each wine is very singular to its terroir while retaining the elegant and refined style that the domaine is renowned for. The wines have a purity and minerality and an excellent potential for long term ageing.
